My usual Kombucha recipe, updated as the recipe is updated.
Version 1.1, released 2020/02/03
Update: I managed to kill the Kombucha. Rest in peace buddy.
- 50g demerera sugar
- 150g golden granulated sugar
- 2L hot (not boiling) water
- 8tsp assam black tea
- 2tsp sencha green tea
Add to ~200ml starter culture.
Leave for ~2 weeks.
Add flavourings + 1tsp golden granulated sugar if necesasry, leave for 2-3 days.
Lime & Ginger - dash of lime juice, and some chopped ginger.
Rosemary & Citrus - a couple of rosemary sprigs, some orange zest, and a dash of lemon juice.
Mango & Passion Fruit - a liberal dash of "mango, passion fruit and yuzu couli" from Waitrose.
Apple & Cinammon - small amount of diced apple (no skin), and a cinammon stick.
Chili & Lime: This was ok, the lime seemed to stop the kombucha from carbonating very well. The chili was subtle but nice.
Lavender & Honey: was petrified that we were growing botulism, 2/10
